Chemical Name:Glyceryl mono and distearate (GMS)
Mono-and distearin has the functions of emulsifying, dispersing, defoaming, foaming, anti-starch aging and controlling fat aggregation. It is often used as an additive in candy, ice cream, cakes and bread.
