Introduction
Sorbitan monostearate, also known as sorbitan stearate or SMS, is a compound produced through the esterification of sorbitan with stearic acid. The molecular formula of this compound is C24H46O6. At room temperature, this sorbitan ester appears as a pale-yellow to yellow granular solid. It has an HLB value of 4.7, which makes it a useful emulsifier. Its wide range of applications includes maintaining the moisture of yeasts, enhancing oil-water dispersion stability, and providing emulsification and stabilization in cosmetics, pharmaceuticals, feeds, coatings, and textile formulations. It is often used in conjunction with polysorbate 60.
