Introduction
Polysorbate 40, also known as Polyoxyethylene (20) Sorbitan Monopalmitate, it is a yellow to orange viscous liquid or frozen paste at room temperature. It has a slight bitter taste, is soluble in water, ethanol, ethyl acetate, and toluene, but insoluble in mineral and vegetable oils. It has emulsifying, wetting, and foaming properties, and is an oil-in-water (O/W) type emulsifier with a Hydrophilic-Lipophilic Balance (HLB) value of 15.6.
