Introduction
Also known as Polyoxyethylene (20) Sorbitan Monostearate, it is a pale yellow to amber oily liquid or paste at room temperature. It has a slight bitter taste, is soluble in water, ethanol, ethyl acetate, and toluene, but insoluble in mineral and vegetable oils. It has emulsifying, wetting, and foaming properties, and is an oil-in-water (O/W) type emulsifier with a Hydrophilic-Lipophilic Balance (HLB) value of 14.9. It is used as an emulsifier in food and cosmetics, and also as an emulsifier in various oil-in-water emulsions. In the textile industry, it is used as an oiling agent and lubricant. When used as an emulsifier, it is often combined with Span 60.
