Introduction
Polysorbate 61, also known as Polyoxyethylene (4) Sorbitan Monostearate, it is a pale yellow to amber oily liquid or paste at room temperature. It is soluble in ethanol, ethyl acetate, and toluene, slightly soluble in mineral and vegetable oils, and can be dispersed in water. It has emulsifying and stabilizing properties, and is an oil-in-water (O/W) type emulsifier with a Hydrophilic-Lipophilic Balance (HLB) value of 9.6.
